INGREDIENTS
- Corn flour (150gr)
- Water (10ml)
- Oil (3ml)
- Salt (2gr)
- Emberzao (40gr)
- Tomato (30gr)
- Sugar (10gr)
- Spicy minced pork (40gr)
- Cabrales cheese (20gr)
- Cream (15ml)
- Egg (2ud)
- Oil
Escandallo Restaurant prepares this recipe with emberzao (a kind of sausage), tomato preserve, mincemeat, fried egg and Cabrales cheese
Preparation:
PREVIOUS PREPARATION: Boil water, oil, and salt.- Blend the corn flour with the boiled water, oil, and salt. Knead the dough. Cut in disc-shaped portions and set to the side.
- Finely chop the tomatoes and remove the seeds. Place the tomatoes in a pot, add sugar and cook until the mixture becomes marmalade. Set to the side.
- Melt the Cabrales cheese in a pan or sauté pan, add the cream and stir thoroughly with a spatula to prevent lumps. Leave it to thicken.
- Chop the emberzao and sear until golden brown. In abundant oil, fry the spicy minced pork and an egg. Fry the tortos, plate them and lay the emberzao flattened slice and a spoonful of tomato confiture on top of one of the tortos; place the spicy minced meat topped with Cabrales cheese on the second torto; and the fried egg on the third torto.
